BLACK OOLONG (SPRING ’20)

Season: Spring ‘20, first flush

Tasting Notes: cacao, red plum, tupelo honey

Roast: Slowly roasted for 10 hours

Oxidation: 90+%

Origin: Alishan Township, Chiayi County, Taiwan

Elevation: 1300 meters

Cultivar: Jinxuan ‘milk oolong’ (金萱)

Recommended Brewing: Steep 5g / 208 degrees / 50 sec / multiple brews

DOUBLE RED OOLONG (SPRING ’20)

Season: Spring ‘20, first flush

Tasting Notes: cognac, burnt caramel, tropical fruit

Mouthfeel: intense, smooth, lingering aftertaste

Aging: This style of oolong lends itself exceptionally to aging, with its flavors deepening and settling over time.

Roast: 60%, roasted slowly over 60 hours in 5×12 hour sessions

Oxidation: 10%

Origin: Shanlinxi, Lugu township, Nantou county, Taiwan

Elevation: 1400 meters

Cultivar: Qingxin (青心)

Recommended Brewing: Steep 5g / 205 degrees / 45 sec / multiple brews
